Creamy chocolate pudding in 30 seconds
So I told you that lately, I'm trying to eat healthier.
I've reduced the sugar and gluten in my diet (not completely. I'm human after all).
I've gone from eating mostly bread to eating a slice a day (Light. Rye. Sourdough.)
Just one a day!
One of the advantages of eating less sugar is enjoying the natural sweetness of foods I've never thought were sweet before. I swear I didn't think a cucumber or a courgette could be so sweet. A few days ago I ate an apple and couldn’t even finish it because it was so sweet. The same thing happened with chocolate. I've never liked milk chocolate, nor white chocolate for that matter (I wasn't even sure it was considered to be chocolate, but apparently it has 27% cocoa butter so it is), but I couldn’t touch chocolate containing more than 70% cocoa solids. Now I indulge in 85% or 90% (a piece or two).
However, on occasion I still desire classic sweets, and this time the craving was especially strong- for chocolate, but not just any chocolate: a creamy, rich, velvety chocolate pudding, just without added sugar or the need to cook or work too much. Also no thickening or solidifying products, which will make the thick, firm, and creamy texture that industrial pudding cups have.
Something simple that you can make in two minutes with the ingredients you have at home.
Not asking for much, right?
Surprisingly, not a problem.
Instructions:
Add the following into a small blender or a Ninja cup:
- 1/2 ripe avocado
- 1 very ripe yellow banana
- 1 juicy majhool date
- 1/2-2/3 cup soy/coconut milk
- 1 tbsp. dutch-processed cocoa powder
- Optional – 2/3 tbsp. vanilla flavor protein powder (I used sun warrior) but it's really up to you
Blend using the food puree program (yes, the baby food program) for exactly 30 seconds. And that's it!
Transfer to a bowl and devour with a teaspoon. If you want you can decorate the top with some shredded coconut, ground cocoa beans, and fresh or frozen berries, but again, it's really up to you.
